It is a keto carotenoid, fully known as 3,3 '- dihydroxy- β,β- Carotene-4,4 '- Dione.
1. The end of the conjugated double bond chain has unsaturated ketone and hydroxyl structures, which is easy to react with and
scavenge free radicals.
2. Three optical isomers can be formed: left-handed (3S, 3 ´ s), racemic (3R, 3 ´ s) and right-handed (3R, 3 ´ R) structures. Only l-astaxanthin has strong antioxidant and other biological activities, and the biological activity of right-handed astaxanthin is low.
